Asparagus Onion Casserole

  • 1 lb Scobey's fresh asparagus
  • 1 med Onion
  • 5 T Butter or Margarine
  • 2 T Flour
  • 1 C Milk
  • 3 oz Cream Cheese
  • 1 t Salt & pinch of pepper
  • 1/2 C Mild shredded cheddar cheese
  • 1 C Bread crumbs


Cut the asparagus into 1 in. pieces. In a skillet, sauté the asparagus and onion in 1 T butter until crisp-tender. Transfer to an ungreased 1 ½ qt baking dish.In a saucepan, melt 2 T butter, add flour and stir until smooth. Add milk and cook until thickened. Add cream cheese, salt and pepper. Pour over the asparagus and onion. Sprinkle with cheddar cheese. Melt remaining butter and toss with bread crumbs. Sprinkle over casserole. Bake, uncovered, at 350 for 40 minutes or until heated through.
