Corn, Black Bean and Red Pepper Relish

This is a great way to use Scobey Produce. Skip the jalapenos if you like it mild and substitute another herb for the cilantro if you don’t care for cilantro.

2 cups fresh corn kernels (cut from about 2 ears)

1 cup cooked black beans

1 red bell pepper, seeded and cut into 1/4 inch pieces

1 jalapeno pepper, seeded, and minced

2 tablespoons minced cilantro

2 tablespoons olive oil

juice of 1 lime

salt and pepper to taste


Toss all ingredients together and serve as a side.
